MEATER recommends using a potato or apple to protect the probe’s internal sensor when measuring grill temperature. Barbican gives you a purpose-built, reusable holder that stays at grate level cook after cook—without sacrificing food—and keeps your probe clean.
In testing at 400°F, Barbican kept a probe’s internal sensors below their manufacturer-specified maximum temperatures for at least three hours; a potato did so for about one hour. For longer cooks, monitor your probe’s internal sensor temperatures in the app and replace Barbican’s water if any sensor approaches the probe manufacturer’s maximum temperature.
